Peanut Butter Oatmeal Cookies

So I didnt get a chance to photograph these cookies before they were gobbled up but here's the recipe anyway.

1-1&1/2Cups Peanut Butter
1Cup Oatmeal Oats
2Eggs
3/4Cup Flour
Nuts,optional

Mix all ingredients together until combined. Roll them into balls then place them on a greased cookie sheet. Cook at 350 for 10-15minutes. Let cool.

Suuuuper simple but so yummy!

These are some of the blueberries I picked down the road. Truly some of the best tasting berries I've ever tasted. My favorites are the half purple/half green :-p.
Noone ever wants those besides me..so I get to eat lots of em' :-D

Creamy Mushroom Chicken&Rice Casserole And A Baked Potato



Ingredients:
-1&1/2Cup Brown Rice,Cooked
-1Can Cream Of Mushroom Soup-Mixed with about 1/2cup milk.
-1-2Cups Chopped,Cooked Chicken
-Garlic Powder
-Cumin
-Salt&Pepper

Very simple. Mix these ingredients together. You can cook in the oven if you like or add some cheese maybe but other than that..that's all there is to it. It was delicious and paired perfectly with the spinach fritters I made.


I made a plate for myself with a baked potato and whole berry cranberry sauce. I love cranberry sauce with starches. Of course I think it goes best with stovetop/dressing though.

Spinach Fritters






This is my own recipe. I am indeed proud of them :-D

Ingredients:
-1Can Spinach(about 14oz. I think),drained very well
-1Can Black Eyed Peas
-1Small Onion,Chopped
-1Egg
-1/2Medium-sized jar of chunky black bean salsa
-Italian Breadcrumbs&Flour
-Garlic Powder
-Salt&Pepper
-Cumin
-Ginger
-Dill
-Parsley
-Oil for frying
You can play around with the herbs&spices,as I always do. I never measure anything so youre on your own with that. I ran out of breadcrumbs so I used half flour.
I put all the ingredients,aside from the egg and the breadcrumbs/flour mixture, into the blender. (My food processor doesnt want to work :-( Very bummed about that.)Next,incorporate the 1egg into it.
After that mixture is blended quite well, I rolled some of it into small-medium sized balls and some of it into small patties.
Then,roll them in the breadcrumb/flour mixture.
Heat 1inch of oil in pot. Drop a few spinach patties/balls in the oil at a time. They dont take too long to fry. A minute or two on each side I'de say.
On just a few of them I stuffed some vegan swiss cheese into the middle. Quite tasty and aside from the fried aspect, they are very healthy ;-) Enjoy!

Homemade Fudge Brownies

This isnt my own recipe but it is certainly a keeper. I baked some brownies yesterday using this recipe and they turned out great.






Ingredients: 1 1/4cups margarine
4 eggs
2 cups sugar
1 1/2 cups flour
2 tsp. vanilla
3/4 cup cocoa
2 cups nuts (optional)
Directions: Preheat oven to 350degrees. Melt butter & add cocoa;mix. Stir in sugar and blend in the eggs- one at a time. Add vanilla. Stir in flour and nuts, mix well. Bake in 9x13inch pan for 30minutes. Let cool on rack 20-30 minutes. Cut into 20 square pieces.


Edited to add: I added about half a cup of Reeses peanut butter chips and about 1/4cup of instant cappuccino mix.
